It’s a Monday which means I am tired and also courtesy of my mint.com account have realized heading into this month that I ate out wayyy too often. Therefore I am staying in and cooking.
On the menu tonight? Walnut Pesto Pasta, snagged from Heather Cristo. If you’d like to follow along you will need these few things:
- olive oil
- cloves of garlic (I get mine pre-peeled)
- lemon juice
- kosher salt
A few shots of the process…blending all of the above up as (my favorite) Healthy Harvest whole grain pasta boils. A small side note, this felt a little bitter/salty, I would salt & lemon with a very light hand. Also plum or heirloom tomatoes are a perfect addition to this.
